Born and raised in Amsterdam, he is the chef at RIJKS and Wils (both with Michelin stars) and at Wils Bakery. With a love for the Dutch soil, his mission is to develop a cuisine that showcases the Low Lands’ beautiful products. His sophisticated menus invite you, the travel-savvy, to explore Dutch traditions and local ingredients throughout the seasons. Joris Bijdendijk is one of the founders of the Low Food movement, a foundation dedicated to preserving Dutch food culture and its products and to raising awareness of sustainability and inclusion—hot topics in a world where food security and sustainable food and agricultural systems are major themes.
